How to make Arroz con Larph


I’m going to preface this post with a simple instruction: GET A RICE COOKER.

I’m not sure I would have survived my early twenties without one; I couldn’t cook anything without it, and I couldn’t afford to live on fast food. (Although I ried my damned hardest). For many years I cradled my rice cooker with the same love a Father bestows onto his firstborn.

My rice cooker never failed me, because it can do no wrong. There’s some sort of weird voodoo that the manufacturers insert when they produce those things. Whatever I put in came out cooked perfectly, and that makes a heck of a difference when you’re trying to put a couple of other dishes together at the same time.

Once you’ve measured out your rice, you’ll need to rinse it. I usually rinse and drain three times. By then, the water will be running clear.

Next, I’ll sautee some ingredients that are going to give me flavour – chopped Red Onion, Garlic, Red Bell Pepper, Green Chilli, maybe even some carrot. Depends largely on whatever is left in the fridge.

Add this to the rinsed rice, and take a look at your spice rack. A little paprika, cumin, chilli pepper if you like it spicy… use your imagination. If you have paella colourant, toss some in there otherwise Tumeric does a good job too.

Most importantly, your cooking liquid. Chicken stock give rice great taste, but if you don’t have any water will do fine. Don’t forget to season with Salt and Pepper.

In roughly 20mins time you will have delicious, perfectly cooked rice on your hands. Make extra and freeze individual portions in zip locs.

    Looks delicious! I'll answer your question. I love to put kimchi in my rice. I'm boring sometimes and I like brown rice. I like eggs in my rice, corned beef... mm, haha.. my favourite is putting sushi vinegar in rice with dashi and some kombu. :O Tasty.
