Spicy Pepper Cookies Recipe

Ingredients
- 3/4 cup unsalted butter, soft
- 1 cup brown sugar
- 1/4 cup white sugar
- 1 each whole egg, at room temperature
- 2 tablespoons whole milk (I've used milk subs with perfectly adequate success)
- 1 teaspoon vanilla extract
- 2 cups unbleached all-purpose flour
- 1/2 teaspoon sea salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/8 teaspoon ground cardamom
- 2 teaspoons freshly ground black pepper
How to make Spicy Pepper Cookies
These cookies happened because I have an (abnormal?) affinity for black pepper and I really love contrasts in normally sweet items - a spicy cookie, for example. They can be baked soft and chewy, or into crisp little wafters (by adjusting the time in the oven, obviously). Consider, if you like, sprinkling more black pepper on top before baking for an extra buzz.
- Cream butter and sugars until light and fluffy.
- Add egg, milk, and vanilla and beat to combine.
- Stir in dry ingredients until dough comes together. Do not overmix, please.
- Chill dough at least 30 minutes before baking.
- Drop or scoop cookies onto silpat- or parchment-lined baking sheet and throw into a a 350ยบ oven.
- Bake until lightly browned around the edges for softer cookies, or until quite golden for crispy cookies.

jazzler saysI literally just made these. (Cooling on the wire rack.) They are DELICIOUS. They didn't spread too much, so I had a little trouble guessing how long I should bake them, so they're a bit soft. I think I am going to aim for a crispier, thinner cookie. I love the kick of the black pepper btw.
