Ingredients
1/2 an avocado in small pieces
3-4 rashers of bacon
1 and a half tblsp sour cream
Grated cheese (to top)

How to make Best savoury pancakes
My mum chains me to the kitchen to make these on a regular basis and demands at least 5.
Cook the bacon to your preference, let it cool slightly in a bowl before gently stirring through avocado and sour cream.
Cook a pancake, lay it out flat and spoon about a tablespoon and a bit of the mix in a line and roll the pancake. Place it on a baking tray (preferably with baking paper), repeat until you have your fill of pancakes (usually makes about 8-10 for me), top with grated cheese and place in a hot oven for a few minutes to warm and melt cheese.
Enjoy and revel in the simplicity and lack of effort!
P.S. Great because you can use left over pancake mix (I'll put up the one I use on a regular basis soon) to make lemon and sugar crepes for dessert, also if you have a look at my other recipes, you'll see orange pasta which you can reserve some of the sour cream from to make this and feed the family for two nights.
