Baby Bellos Sauce

Ingredients

-10-20 small portobellos (baby or Crimini). Cut into small dices. -1 cup Panko Crumbs -2 Garlic Cloves (diced) -Salt and Pepper (to taste) -½ Cup aged grated Parmesan Cheese -1/2 teas. cayenne - 2 C Heavy Cream

How to make Baby Bellos Sauce


I created this dish from a previous recipe for bacon wrapped bellos with the bread crumb filling. The filling was so good I had to see what it was like over pasta, it was amazing.

  1. In a preparation bowl pull stems from mushrooms and dice and add garlic, Cheese, Panko Crumbs and salt and pepper.
  2. In a warm sauce pan add cream. Heat cream careful not scald it, slowly add mixture into sauce pan and with a whisk stir until ingredients are incorporated into cream. Heat sauce until thick, test by taking a spoon and the sauce should coat the back of spoon. Before removing sauce add the cayenne pepper to bring out the flavor of the cream.
  3. Serve over Pasta
