Ingredients
There are many different things you can put in inari zushi, but this is a fairly traditional recipe.
- Sushi rice (see the recipe)
- Inari zushi no moto (tinned tofu pockets). If you can't get this, deep-fry some square pieces of tofu then simmer in a mirin/soy sauce mix then slice in half. Results may vary. Use the tinned stuff.
- Spring onions, thinly chopped (scallions)
- Sesame seeds
- Light miso
How to make Inari zushi
Dry fry the sesame seeds until they darken, then put to one side.
In a bowl, mix together the rice, spring onions, toasted sesame seeds and a touch of miso. Mix together evenly.
Take a inari zushi pocket, open it up and put a small piece (golfball sized) of the rice mixture inside. Fold the top over and leave to settle. Repeat for every piece.
