Banana Scones Recipe

Ingredients
Dry:
- 1 cup flour(I use whole wheat, all purpose is lighter and nice too)
- 2 ts Baking Powder
- 1 ts cinnamon
- 3 Ts sugar
- 1/2 ts salt
Wet:
- 2 Ts Butter, melted
- 1 overly ripened banana(about 3/4 cup mashed)
How to make Banana Scones
Heres a recipe that I made after a few experiments with over-ripe bananas. It startes super easy with just flour, banana, and baking powder. I've added a few other things to round the taste out. They are like semisweet biscuits with the taste of banana.
- Preheat oven to 425.
- Mash banana and stir in melted butter.
- Mix together all dry ingredients.
- Stir dry ingredients into the wet mix. Stir just enough to incorporate all of the dry ingrediants. The less you mix, the more tender the final baked good.
- Flatten the dough on a floured cutting board to about 3/4 inch thick and cut into ~6 scones.
- Place these on a greased cookie sheet(I use a cast iron skillet) and bake for ~13 minutes until lightly browned.
- Remove from oven, let cool for 5 minutes, then eat.
