Ingredients
- 1 lb Toms
- 1 Large Potato
- 2 carrotts
- 1 onion
- 1 pint water or stock
- pinch of salt
- pinch of pepper
- 1 tsp tarragon
- 1 flat tsp sugar
How to make Tomato Soup
My Mums Tommy soup, tastes even better with home grown tomatoes
Plunge toms into boiling water for 3 mins to loosen skins.
Peel off & discard skins
Peel and chop everything and boil in a pan for 20 mins (or 6 minutes in a pressure cooker) until soft.
Mix with food processor or blender until smooth.
Taste. If too sharp, add more sugar and a little cream or milk.
Serve with buttered Baguette or freshly baked bread.

I roast my tomatoes, skins and all, and then cook everything down together. At the very end I blitz it all together with a hand blender. Talk about a warm blanket of a meal, tommy soup is right up there with mashed potatoes and mac and cheese. http://blakemakes.com/2007/07/02/vine-ripe-roasted/
