Spicy Vegetarian Spaghetti Sauce Recipe

Ingredients
1 Eggplant peeled and diced2 bell peppers (sliced)
2 Onions (Diced)
3 Chili peppers (Sliced)
Mushrooms (quartered)
Garlic (3-5 cloves diced)
Olive Oil
Cayenne Pepper
Black pepper (I prefer large grain)
How to make Spicy Vegetarian Spaghetti Sauce
I am an avid meat eater but have recently been sort of disgusted at how my every meal is meat centric. It was HARD for me not to add ground beef or pork to this recipe but I didn't and I don't regret it. Anyway, here's how I did it.
This is a rather spicy vegetarian dish that contains a very low amount of salt and fat. If you are a non-spicy vegetarian just cut back on the prescribed amount of chilis.
Start by adding a healthy glug of Olive oil to the saucepan. The bottom should almost be covered. Turn the eye on high. When the oil is hot enough add all the vegetables except the garlic. Turn over until most of the oil is absorbed, then turn the heat to low - med low. Add the garlic, mix, then cover the pan. Leave covered for 30-35 minutes, stirring occasionally until the bell peppers are relatively soft.
Meanwhile, add two small jars of your favorite pasta sauce to a pot, and add a little bit of water if the sauce is thick. Turn the heat on low and stir occasionally.
Once the vegetables are done, simply dumb them in the sauce and mix. I seasoned with a few strong shakes of cayenne and a pinch of black pepper.
I allowed the vegetables to simmer on low heat for a while before to homogenize the flavors, but the last step is to ladle the sauce over your favorite pasta. I used rigatoni.
