Blackened Chicken Recipe

Ingredients
- 2 boneless, skinless chicken breasts
- 1 tsp paprika
- 1/2 tsp (kosher) salt
- 1/2 tsp cayenne pepper
- 1/2 tsp cumin
- 1/8 tsp curry powder
- 1/2 tsp dried thyme
- 1/2 tsp freshly ground pepper
- 1/8 tsp garlic powder
- 1/8 tsp cinnamon
- x tsp any other spice you'd like to add
- Oil to coat pan
How to make Blackened Chicken
A pretty spicy alternative to your weeknight chicken dish. I've also used smaller chicken strips/tenders to make more of an appetizer out of this. I took a traditional blackened spice mix and added a bit of curry powder and cinnamon to create more depth of flavor. Starting it in a really hot pan then finishing it in the oven produced a nice crisp outer crust while not completely drying out the chicken.
Pre-heat oven to 350 F
Prep the boneless, skinless chicken breasts so they are clean and ready to go, cut to the desired serving size
In a bowl mix together all of the dry seasonings and set aside.
Pre-heat frying pan. Let it get really hot!
Before placing chicken in the pan, season one side with spice blend. Rub well into chicken.
Place chicken SEASONED-SIDE DOWN into pan. If you'd like to season the other side do so now. Cook for 2-3 minutes, until the side begins to blacken. Flip and cook other side for 2-3 minutes
Transfer to oven to finish off until done.
