Ingredients
- 300g pork loin, thinly sliced
- 1 tbsp brown sugar
- 1 tbsp fish sauce
- Handful sugar snap peas
- 1 red chilli, deseeded, finely sliced
- 1 handful of mint, roughly torn
- 1 packet straight-to-wok noodles
How to make Pork with Sugar Snap Peas, Chilli & Mint
Had some sugar snap peas which needed eating one evening. I had come across a recipe that used the peas and some pork loin and it formed the basis for this dish, although in reality mine turned out completely different.
- Heat the wok and add some oil (groundnut is best)
- Add the pork and stir fry till the outsides are cooked and browned
- Add the sugar and dissolve in the liquid that's formed, then add the fish sauce
- Add the chilli, peas and mint, adding a little more water if it needs more liquid
- Stir fry for a couple of minutes then add some straight-to-wok noodles
- Stir those in for another minute then serve
