500 g beef sirloin (with some fat), cut into beef steak slices and pounded
4 tbsp flour
½ cup soy sauce
½ cup lemon/calamansi juice
1 tbsp Worcestershire sauce
1 tbsp freshly ground black pepper
2 potatoes cut into ¼-inch discs
2 onions, sliced into thin rounds
6 tbsp cooking oil
How to make Pinoy Bistek
Mix soy sauce, lemon juice, Worcestershire sauce, and black pepper in a large bowl.
Marinate beef slices in soy mixture for 30minutes then drain, reserving the marinade. Lightly dredge beef slices in flour.
In medium hot oil, sear beef slices a few slices at a time for 30seconds each side and set aside.
Pour off half the oil in the searing pan and sauté onions for a few seconds. Add in the potato slices and pour reserved marinade plus water and simmer for 20minutes or until the potatoes are soft.
Place beef slices back to the sauce and let simmer for 5minutes more. Serve immediately.
