Oma's Legendary Chicken Soup Recipe

Ingredients

  • 1 raw chicken, quartered
  • 4 quarts cold water
  • 3 parsley roots, peeled & sliced into 1 inch pieces
  • 5 carrots, peeled & sliced into 2 inch pieces
  • 2 parsnips, peeled & sliced into 1 inch pieces
  • 1 onion, skin-on, quartered
  • 4 celery stalks, sliced into 2 inch pieces
  • 1 kohlrabi, peeled & sliced into 1 inch pieces
  • 1 TBSP Salt
  • 1/2 bunch parsley
  • 6 peppercorns, whole
  • 3 cloves, whole
  • 1 tomato, quartered

Place all ingredients into pot large enough to hold all the ingredients and still small enough so that the water just covers the chicken. 

Bring to boil, simmer for 1 hour, remove from heat, remove solids from soup with strainer, adjust salt to your taste, and serve with farina dumpling recipe (see recipe) or your favorite soup noodles.  Serve the chicken and vegetables as a 2nd course with your favorite sauce (see peasant tomato gravy or peasant onion sauce recipe).  The flavors of the boiled chicken and vegetables with the sauce are simply delicious.
