Ingredients
- 1 lb. ground beef (or other meat)
- 1 10¾ oz. can of condensed tomato soup (of your choosing)
- 1 cup salsa of your choosing (of type and level of spice)
- 1/2 cup milk
- 8 large tortillas (preferably flour)
1 cup shredded cheese, with some extra for topping
optional: sour cream (also for topping)

Prep time: ~20 minutes; Cook time: ~30 minutes
Serves: 4+
(Note: recipe ingredients can be doubled and split into separate casserole dishes for larger quantities.)
This is a great casserole-type dish to bring to a potluck! It can also be served as a main dish with some veggies on the side and, depending on the season, some southwestern hot cocoa, or (non-alcoholic) sangría. It can also be made vegetarian or vegan. (See my other recipes for these!)
Start by browning the beef (or other meat) over medium-high heat. Make sure to break it up as much as possible since it will later need to be spread through the casserole. When browned, pour off fat.
