Ingredients
1 lb sole filets 1 T olive oil 1/2 red onion, chopped 1 T minced garlic 1 tsp dried dill weed 1 c white Sancerre wine (or sauvignon blanc)
How to make simmered sole
wash sole filets. in shallow skillet, heat olive oil and saute onion and garlic until tender. add dill and wine, turning heat to low, then add sole. cover pan and gently cook sole filets in simmering sauce until flaky.
serves two.
