Quick Prawn and Bamboo Curry

Ingredients

  • 250 g cooked and peeled prawns
  • 1 can coconut milk
  • 1 green pepper
  • 1 tablespoon green curry paste
  • 1/2 can of bamboo shoots
  • 1 tablespoon peanut butter
  • 1 onion
  • fresh ginger
  • Basmati rice
  • salt and pepper
  • olive oil

How to make Quick Prawn and Bamboo Curry


  1. chop up the onion and the pepper
  2. put some oil into a pot and shallow fry the onion and pepper
  3. chop up some ginger and add it to the pot
  4. add the prawns and the bamboo shoots
  5. add the curry paste, peanut butter and coconut milk
  6. simmer it for some minutes
  7. season to taste with salt and pepper and serve with Basmati rice
