Con la batidora, muele el tofu junto con unas cucharadas de azúcar y vainilla al gusto, un poco de zumo de limón y de naranja, y una cucharadita de ralladura de cáscara de estos cítricos. Insiste hasta que te quede una crema muy suave y sin grumos, como un yogur. Pela y trocea la fruta en láminas y cubos pequeños. En una copa, coloca un fondo de frutas, encima unas cucharadas del tofu avainillado, y remata con una buena capa de frutas frescas de nuevo. Mete en la nevera un ratito, para que esté más refrescante, y en el momento de servir decora con unas hojitas de menta o unos frutos secos molidos.

Variante: Puedes sustituir el batido de tofu por yogures de soja de sabores (natural, vainilla, chocolate, fresa…) y tendrás un postre completamente distinto cada vez.
