Senator Isakson's Vidalia Onion Soup

Ingredients

  • 2 Vidalia Onions (finely chopped)
  • 1/4 Cup Butter
  • 1/2 Cup All-Purpose Flour
  • 1 Can (15 ounces) Chicken Broth
  • 3 Cups Milk
  • 1/2 Tablespoon Thyme
  • 2 Bay Leaves
  • 1/2 Teaspoon Salt (or more to taste)
  • 1/3 Cup White Wine (I use Sauvignon Blanc)
  • 1 Teaspoon Garlic Powder
  • 1/2 Cup Finely Chopped Peanuts (optional)

How to make Senator Isakson's Vidalia Onion Soup


Every so often Senators and Congressmen will send gifts to their colleagues in Congress. This was a recipe we received along with a few boxes of onions a few months back from the office of Senator Johnny Isakson. I had never had a white onion soup, and was pleasantly surprised, though I personally prefer more salt than the recipe calls for.

  1. Saute butter and onions until tender
  2. Mix flour and chicken broth, add to onion mixture
  3. Add milk and other ingredients
  4. Simmer slowly for 20 minutes (you can add time here for thicker soup)
  5. Remove bay leaves
  6. If desired, garnish with peanuts

Serves 6
