Senator Isakson's Vidalia Onion Soup Recipe

Ingredients
- 2 Vidalia Onions (finely chopped)
- 1/4 Cup Butter
- 1/2 Cup All-Purpose Flour
- 1 Can (15 ounces) Chicken Broth
- 3 Cups Milk
- 1/2 Tablespoon Thyme
- 2 Bay Leaves
- 1/2 Teaspoon Salt (or more to taste)
- 1/3 Cup White Wine (I use Sauvignon Blanc)
- 1 Teaspoon Garlic Powder
- 1/2 Cup Finely Chopped Peanuts (optional)
How to make Senator Isakson's Vidalia Onion Soup
Every so often Senators and Congressmen will send gifts to their colleagues in Congress. This was a recipe we received along with a few boxes of onions a few months back from the office of Senator Johnny Isakson. I had never had a white onion soup, and was pleasantly surprised, though I personally prefer more salt than the recipe calls for.
- Saute butter and onions until tender
- Mix flour and chicken broth, add to onion mixture
- Add milk and other ingredients
- Simmer slowly for 20 minutes (you can add time here for thicker soup)
- Remove bay leaves
- If desired, garnish with peanuts
Serves 6
