Farmhouse Pumpkin Soup

Ingredients

Serves 6-8

25g/2 tbsp butter
1 large onion
2 shallots
2 potatoes
2 cloves of garlic
900g/6 cups fresh diced pumpkin
2 litres/ 3 1/2 pints chicken (or veg) stock
1/2 tsp ground cumin
pinch of chilli
salt + pepper
fresh parsley (or corriander) to garnish

How to make Farmhouse Pumpkin Soup


The perfect, nutricious way to warm up on a cold, autumn's day! Yummy & cheap.

Peel, de-seed & dice the pumpkin, peel & chop the onions/shallots and dice the potatoes.

Fry the garlic (in butter) on low heat for 1 minute.

Turn up the heat and throw in the onions/shallots and saute for 4-5 mins or until soft.

Add the potatoes, pumpkin, stock, spices, salt + pepper and bring to the boil.

Cover with lid, reduce heat and allow to simmer for 1 hour, stiring regularly.

Transfer the soup in batches to a blender or food processor, and blend until smooth.

Return to the pot, and continue cooking until heated through.

Garnish with either parsley or corriander and serve with crusty warm bread.
