Ingredients
Serves 2-3
200g skinned and split yellow (or orange) lentils
900ml water
1 inch fresh ginger, peeled and cut into thin strips
2 cloves garlic, peeled and cut into five large pieces
3 green chillies, left whole (optional)
¾ tsp haldi (turmeric) powder
½ can tinned tomatoes
salt, to taste
1½ tbsp butter or vegetable oil
1 tsp ground cumin
½ tsp garam masala
How to make Tasty Dhal
Dhal is the staple dish of India and simply delicious.
1 Place the lentils, water, ginger, garlic, tumeric and chillies in a pan, bring to a boil, then simmer over a moderate heat for 10 minutes.
2 Stir in the tomatoes and cook for a further 20 minutes.
3 Add salt and cook for another 10 minutes or so, until the lentils have started to break down and the curry comes together.
4 Meanwhile, heat the butter or oil in a small pan. Add the cumin, coriander and garam masala and fry for 2 mins, stirring frequently.
5 Pour the mixture into the pan of lentils. Throw in some fresh coriander.
6 Cook for another minute and serve on a bed of Basmati rice with plain yoghurt and an ice cold beer!
