Ingredients

Good old chicken pot pie filling topped over butter brushed toasted hotdog rolls! Came up with this recipe as i was cleaning the pantry! Hehe.. Still as comforting as the original during this cold rainy days here. Any crusty bread, to my opinion, would work fine for this recipe. This yields about 3-4 servings.

  • 3 boneless, skinless chicken thighs (dark chicken meat is just a personal preference. use white if you want.)
  • 1 cup frozen mixed veggies (diced carrots, corn & peas mix)
  • 3/4 cup full cream milk
  • 1/2 cup chicken stock
  • 2 cloves garlic minced
  • 1 medium size white onion diced fine
  • 1 tbsp. flour
  • oil for frying the chicken
  • butter (i used about 1/4 of a stick)
  • hotdog rolls (or other bread if you prefer)
  • salt and pepper to taste

How to make Chicken Pot Roll


  1. Season the chicken thighs with salt and pepper. Heat some oil in a pan, just enough to coat the bottom. Sear the chicken. Cook for a couple of minutes until done and brown on both sides. Remove from oil.
  2. If you think much oil is left behind discard most of it leaving just about a teaspoon behind. Add in a dab of butter and let it melt over low heat. Saute the garlic and onion until the onions are translucent.
  3. Put 1 tablespoon of flour and let it cook for a few seconds stirring to incorporate the flour.
  4. Pour in the chicken stock and milk and let simmer over medium low heat. Don't boil it as it would curd on you. Just simmer it low until it slightly thickens.
  5. Meanwhile chopped the chicken thighs into tiny bite size pieces. Set aside.
  6. Split your hotdog buns and bush some melted butter over both sides and toast till it slightly gets brown and crisp.
  7. When the sauce starts to simmer, add in the chicken pieces and mix veggies. Mix and let simmer for a couple more minutes or until the desired consistency of your sauce is achieved. Add in some water in case it goes too thick for you. The sauce gets thicker the longer you boil and also after when it sits.
  8. Adjust your seasoning. Smudge over your warm crusty hotdog buns and serve!
