Easy Sponge Cake

  • 4 oz. sifted all purpose flour
  • 4 eggs
  • 3.5 oz. caster sugar
  • 3 tbsp. melted butter


How to make Easy Sponge Cake

  1. Wisk eggs on high until frothy. I used a hand held mixer for this. Add in sugar gradually until well incorporated. Whisk until light in color and fluffy. Continue mixing in low speed until mixture is smooth.
  2. Divide flour into 3 portions and sift over the egg mixture, carefully folding with a spatula after each addition. Having a few streaks of flour visible on the mix wont be a big deal. Just DON'T over mix it.
  3. Drizzle the butter in the mix and fold it stirring in one direction.
  4. Pour batter into a lined and greased baking pan and bake in a pre heated oven at around 350 F for about 30 - 35 minutes.
  5. Let it cool a bit after baking. Top with icing of your choice or just dust with powdered sugar to finish it.
