How to make Pomegranate Walnut Infused Olives
May not look very good in the picture but this is delicious acompliment to any dish, especially if you like olives and pomegranate. The color is a rich pink from the pomegranate and usually no one will be able to guess how it's made or what it's made from (walnuts mainly).
Beware, this dish is high in garlic!
This is a specialty dish made only in Northern Iran.
- In a food processor, finely chop walnuts until they take paste form. Remove and place in mixing bowl
- Using garlic press, add garlic to walnut mixture
- Slowly start adding pomegranate to the walnut mixture/paste so the paste opens up. Add little juice at a time and stir/mix the mixture in the meantime
- Add olives and mix together
- Refridgerate overnight
- Serve as a side to any chicken or steak dish
Serves 12.
