Ingredients
- 1 piece of brisket meat (In Chile, sobrecostilla): about 3 pounds (1.35 kg)
- Salt at your taste
How to make Brisket BBQ
- Clean your grill with a metallic brush, until all the old fat and burned material is off. Meanwhile, put 5 pounds (2.5 kg app.) of wood charcoal on the fire place, as a pile. Light the charcoal with an organic fuel (i.e. a paper napkin moisted with vegetable oil as a wick).
- When the charcoal is fully on fire, spread the pile with a shovel or a metal stick, in order to cover all the base of the fireplace. Put the grill over the fireplace and warm it for five minutes.
- Put the brisket piece over the warmed grill. Seal the meat, and then turn around the piece. Spread salt over the burn side. Repeat the process until all the piece is grilled.
- Let the meat cook slowly, turn the piece every 3-4 minutes, until the meat gets the point that you like (bloody, middle or well cooked).
- Cut on 6 oz. pieces. Serve warm with boiled potatoes and salads.
