turkey meatloaf muffin Recipe

Ingredients
turkey ground meat
spinach (i used frozen)
tomato
onion
whole wheat bread
milk
egg
pepper/salt
ketchup
chedder cheese (optional)
How to make turkey meatloaf muffin
1... mix the meat + pieces of bread + milk + egg
2... mix in veggies + pepper/salt + ketchup
3... stuff them in a muffin tin
(i used about 1 pound + of meat and it fit in a 12 muffin tin)
*if you want to add chedder inside, push a hole with a spoon in the meat mixture, stuff chedder and cover with more mixture
4... round the top and splash ketchup on it
5... bake!
#on a side note. they became very watery during the bake. I think its because of the extra water in spinach and tomato... need to dry first I guess? Next time I will also chop the onions more fine, the chunks were too big for the little muffins.

ShoggothDreams saysNormally I avoid Onion & Garlic POWDER, preferring the real things, but for recipes like this, where moisture is an issue, I find they can help some. Another option, whisk Powdered Eggs into the Milk and omit real Eggs. Otherwise you rish needing to either omit the Spinach (which does release so much water -makes Spanikopita difficult some times.), or add too much Bread... But the idea of mini Meatloaf Muffins is great! Ideal for taking to work and such.
