Mulligatawny Stew

Ingredients

  • 4 Tbl butter
  • 1 whole chicken
  • 2 heaping tsp curry (or to taste)
  • 2 quarts chicken stock
  • 1 large carrot (chopped)
  • 1/2 - 1 cup celery (chopped)
  • 1 Granny Smith apple (chopped)
  • 1 whole clove (resist the urge to add more)
  • 1/2 cup sour cream
  • parsley (chopped and to taste)
  • 1/2 cup raisins
  • 2 cups cooked white rice

How to make Mulligatawny Stew


  1. Cook 2 cups of steamed white rice
  2. Boil chicken and remove meat (tearing into bite-size chunks)
  3. Saute all the veggies and apple in butter until just slightly soft
  4. Add curry and clove and cook for another 5 minutes
  5. Transfer all ingredients over to a large boiling pot
  6. Add raisins and stir in sour cream.
  7. Add chicken and chicken stock to the boil pot (do not boil keep it about medium heat)
  8. Let it cook for 10 minutes, then reduce to a simmer and add rice.
  9. Let is simmer for 30+ minutes.
  10. Serve
