Mulligatawny Stew Recipe

Ingredients
- 4 Tbl butter
- 1 whole chicken
- 2 heaping tsp curry (or to taste)
- 2 quarts chicken stock
- 1 large carrot (chopped)
- 1/2 - 1 cup celery (chopped)
- 1 Granny Smith apple (chopped)
- 1 whole clove (resist the urge to add more)
- 1/2 cup sour cream
- parsley (chopped and to taste)
- 1/2 cup raisins
- 2 cups cooked white rice
How to make Mulligatawny Stew
- Cook 2 cups of steamed white rice
- Boil chicken and remove meat (tearing into bite-size chunks)
- Saute all the veggies and apple in butter until just slightly soft
- Add curry and clove and cook for another 5 minutes
- Transfer all ingredients over to a large boiling pot
- Add raisins and stir in sour cream.
- Add chicken and chicken stock to the boil pot (do not boil keep it about medium heat)
- Let it cook for 10 minutes, then reduce to a simmer and add rice.
- Let is simmer for 30+ minutes.
- Serve
