vitamin boost soup Recipe

Ingredients
- 100g watercress
- 200g spinach
- 1 cup peas
- 1 white onion
- 1 small potato
- 2 large cloves garlic
- 1 litre stock (veg or chicken)
- To serve: seasoning, olive oil, milk/ cream or creme fraiche
How to make vitamin boost soup
- saute onions and garlic in a little oil
- saute thin slices of potato
- add green leaves and peas (reserving some spinach)
- cover with stock and simmer for 5 mins
- add rest of spinach
- season (lots of black pepper)
- blend in a food processor
- check seasoning













This sounds so sexy to me..... I would love to try this one!!! How is the taste actually? Is it yummy? I love vegetables but I don't like to feel as if I am a caterpillar ;]
