Tofu Sandwich w/ Avocado & Grated Carrots Recipe

Ingredients
- bread (I like using herb focaccia)
- a small carrot, grated
- mushrooms, sliced thinly
- a thick slice of onion
- soy sauce
- garlic powder
- firm tofu
- avocado
How to make Tofu Sandwich w/ Avocado & Grated Carrots
I threw this together one night trying to make a quick veg-friendly meal out of the carnivorous debris that is my parents' fridge. It's described largely in generalities since it's a leftovers-based concoction and how much you make will be up to your level of hunger. But, I assure you it will be quick to prepare. It is vegan if you use the appropriate bread products (possibly also macrobiotic-friendly) and took me roughly 15 minutes from start to finish, including cleanup. Note: Be sure to toast the bread. If it is soft, it is only going to get soggy.
Cut thick slices of tofu (I used two of roughly 1/4 inch thickness). Place the tofu on a small separate plate and cover each slice with soy sauce. Not enough for it to be swimming in it, just enough to be sure it's stained. I like to slightly score the top with the tip of my knife so that it seeps in more quickly.
Add a few dashes of garlic powder to the tofu and let it sit while you:
Grate the carrot. You'll need about a small handful depending on the size of your sandwich (or your affection for carrots). Set aside.
Thinly slice the mushrooms and take a 1/2 inch thick slice out of an onion (preferably the center, but I was only working with a leftover half of one). Break the onion slice apart into its different layers by hand.
Heat a small pan with a little oil in it (I used grapeseed oil). Once it's hot, cook the onion until it begins to brown, then add the mushrooms. They will cook quickly so soon after:
Take the plate of tofu+marinade and add it to the pan. Place the tofu slices and pour the rest of the marinade all over the contents of the pan. There should be enough soy sauce for it to simmer a little. Add more if necessary.
I like to cook one side of the tofu and then flip it, just to make sure the flavor of the onion and mushrooms really gets in.
Once that's finished, place the tofu on the bread and layer the grated carrot on top.
Add some thin slices of avocado on top of that and you're done.
