I experienced yet another vegan brownie baking disaster on Sunday. This time, I think I have figured out what's causing the batter to swell so much in the oven -- it's the egg replacement I'm using (2 tablespoons water, 2 teaspoons baking soda, 1 tablespoon oil). Despite the tragedy, I absolutely must tell you all about the brownies.

My husband bought this bar of chocolate a month or so ago . . .  that had dried hot peppers in it! So, I used that as the chocolate in the recipe . . . and then added a pinch of cayenne pepper (and a little cinnamon). It had a kick for sure. And I was so excited to try the finished product. About 15 minutes in, sweet brownie aromas wafted up the stairs from our kitchen and into the office (where I was looking up even more recipes). Yum, I thought. Yum!

 

Then smoke.

Then the alarm.

Then – to my horror – black brownie batter smoldering on the oven floor.

Ahh! Can SOMEONE give me a great vegan brownie recipe that doesn't explode in the oven? I imagine I just need to use applesauce -- something with less baking powder.


So, last night I decided to go no-bake on you all. Well, I was talking to my friend Jill online a few days ago . . . and she mentioned she was making fudge. And I realized I haven't done that in a LONG time (which, Jill, if you're reading this -- that little joke is for you . . . hahaha). And also never vegan.

PEANUT BUTTER FUDGE

What you'll need . . .

  • 1/2 cup vegan butter
  • 2-1/4 cups brown sugar
  • 1/2 cup soy milk
  • 3/4 cup peanut butter (smooth . . . but I bet crunchy is also good!)
  • 1 teaspoon vanilla extract
  • 3-1/2 cups vegan powdered sugar

Method . . .

  1. Melt "butter" in a medium saucepan over medium heat.
  2. Stir in brown sugar and milk -- and bring to a boil and boil for 2 minutes, stirring frequently.
  3. Remove from heat. Stir in peanut butter and vanilla (and make sure you read your labels carefully . . . because I accidentally poured in some mint extract!!!).
  4. Pour over confectioners' sugar in a large mixing bowl. Beat until smooth; pour into an 9x13 inch dish.
  5. Chill until firm and cut into squares.

    Earth Balance. Or any other kind of non-dairy margarine. :)
