For the pastry:
75 gm flour
1/8 tsp salt
75 gm butter
1 egg yolk
35 cc cold water
15gm flour for dusting

1 apple-peel- chopped
2 tbsp whipped cream
1 tbsp sugar
1/2 tsp vanilla

For the sauce:
50gm ground almond
2 eggs
80gm sugar
1/2 cup whipped cream
60gm butter
1/2 tsp vanilla

icing sugar for dusting

How to make apple tart

1. Sieve flour and chill for 30 mins to cool.
2. Slice the butter and add to flour. Cut with pastry knife to  resemble crumbs. Mix yolk and cold water and add to flour mixture.
3. knead to a soft dough. Wrap in a plastic and chill for 1 hour.
4. with a plastic paper put dough in between and roll , fold into 3 parts and repeat twice. Roll out thinly .
5. place dough in few tart tins, cut off excess pastry by rolling over the surface.
6 . Heat a pan , add apple and cream and sugar. Cook till it appears caramel. Add vanilla. leave to cool.
7. For the sauce , mix almond and egg, beat with a wooden spoon. Add cream and mix well.
8. Melt the butter and add to almond mixture.
9. Spoon apple in pastry cases, divide them equally, pour sauce over apple.
10. Bake in oven at 180 C for 15 mins and the lower to 160 C and bake further for 15 mins. Cool.
11. Sieve icing sugar on top .
