Ingredients
500gm cockles-clean1 lemon grass crushed
1 tbsp tamarind paste
1/2 tsp black pepper
1 red chilly-sliced
1/2 big onion-sliced
1 tsp oyster sauce
1 tbsp dark sweet soy sauce
How to make black pepper cockles
1. Add 2 cups water in a pot and bring to boil. Add cockles and lemon grass and tamarind paste. Let boil for 1 min.
2. Discard water , clean the cockles under clean water, discard the shells.
3. Heat 2 tbsp oil, saute onion and chilly till soft, add cockles and then black pepper, oyster sauce and soy sauce. Stir to mix well. serve.
