Ingredients
For sponge layers:2 eggs
1 egg white
2 tbsp sugar
3 tbsp flour
1/2 tsp baking powder
1 tbsp butter -melted
1 tsp vanilla
For sugar syrup:
50gm sugar
2 tbsp water
For sandwich filling:
A:
1 egg white
110gm butter-soften
2 tbsp blueberry puree
B:
1/4 cup whip cream
1 tsp sugar
C;
1/3 cup blueberry syrup
3 tbsp raspberry jam
2 tbsp blueberry puree
2 tbsp sugar
How to make Blueberry square
1. For the sponge cake, whisk eggs and sugar till thicken. Add flour and baking powder, mix and add vanilla and melted butter.Pour into a tray lined with greased -proof paper and bake for 20 mins. Cool and divide in 3 sections.
2.Whisk egg white till frothy and add sugar syrup and whisk till firm.
3. Then add butter and mix well.Add 1 tbsp of the blueberry puree and mix well.(A)
4. Whipped cream with sugar till thicken.(B)
5 Mix C .
6. To arrange, Brush each cake with the remain blueberry puree, then spread each layer with A,B, and C. Sandwich them together. Let the C mixture be the top part.
7. Cut into 4.5 cm X 5cm.square. Serve chill.
NOTE:
if you are using canned blueberry, use the syrup in the tin . if you are using fresh berries, take about 250gm berries and boil for 5 mins , Strain and you can use the strained juice for the syrup. Mash the berries through a fine sieve to get the puree.
