For the pizza case:
2 cups flour
1 tbsp instant yeast
1 tbsp sugar
1/8 tsp salt
1/2 cup warm water
1 tbsp butter

1 brinjal (egg plant)-cut cube
3 large tomatoes-blanch -peel-chopped
1/2 cup chopped button mushrooms-chopped
2 tbsp tomato ketchup
1 tbsp oregano
3/4 cup chopped chicken or meat
salt and pepper
1 french onion-chopped
1 tbsp chopped garlic
1 tbsp flour
4 tbsp olive oil

How to make Egg plants tomato pizza

1. For the dough , mix and knead to a soft dough, leave to rise.
2. Roll flat and thin and place on a greased pizza tray.
3. In a pan, heat olive oil. Saute chopped ingredients. Add chicken and brinjals. Then add chopped tomatoes. Cook till almost dried. Add flour to thicken sauce. Add season.
4. Spoon on pizza case. Top with cheese of your choice.
5. Bake in preheated oven at 250 C for 7 to 10 mins. Serve hot.
