150gm flour
1/4tsp salt
150gm butter
1/2 egg yolk
80cc cold water

2/3 tsp gelatin
3 tbsp cold water

4 egg yolks
70gm sugar
4 tbsp lemon juice

1 tsp lemon zest
4/5 cup whip cream

icing for dusting

How to make Layered cream pie

1. Rub butter in the flour like crumbs. Add water mix with yolk . Knead to a soft dough and wrap in a plastic and chill for 30 mins.
2 Roll out using plastic sandwich in between , fold the dough 3 times. Divide into 3 parts. Roll each 10X27 cm size. Prickly hole with folk.
Bake at 170 C for 12 -15 mins. Cool on rack.
3. Dissolved the gelatin in cold water. Whisk the egg yolk and sugar till thicken. Add lemon juice, Stir under heat .
4. Remove heat and add gelatin water. Cool.
5. Whisk the whip cream and zest till soft peak, Mix together with gelatin .
6. Spread on the pastry . Sandwich the 3 pieces of pastry on top of each other and press firmly .
7. Sieve icing sugar over sandwich and using an hot iron , burn a crisscross on top.
