Ingredients
330gm flour1 1/2 cup warm water
1 tsp instant yeast
1 tsp bicarbonate soda
1/3 cup sugar
3 eggs
Filling:
roasted peanuts-grind coarsely
sugar
sesame seeds
butter
How to make Malaysian Peanut pancake-(Apam balik)
1. For the batter, mix altogether to smooth batter.
2. Leave for 30 mins.
3. Heat pan, pour a ladle of batter and spread out flat like pancake. Sprinkle some peanut, sugar , sesame seeds and dot with butter.
4. Fold in half and cut, serve hot.

chynnagal saysFor the filling, do you mix all the ingredients (peanuts, sugar, sesame seeds and butter) together before adding it to the pancake? My cousin used to mix butter and sugar into a paste, then spread it onto hot toast to make a really yummy breakfast sandwich.

marianne49 sayswell, yes you mix all the filling together before you sprinkle on over pancake. then dot some butter and fold into half. serve warm. You can eat with jam or other filling if you dont like peanut .

marianne49 saysactually the apam balik in KL is much different than in Kuching. No sweet corn added !!I prefer to make my own becoz the one sold in town is always too oily !!

marianne49 saysyou welcome. you can also use the pancake recipe using baking powder instead of yeast , Sometime instead of waiting for the yeast to rise I use baking powder which makes a fluffy apam . still its individual choice..

marianne49 saysone best way to make nice apam is 2 cups flour, 1 tsp baking powder, 1/4 tsp salt, 1/2 cup sugar. 1/2 milk powder, 2 yolks and 1 tsp vanilla. Mixed well with 1 cup water until smooth thick batter. Whisk up 2 egg white till stiff. Add to the batter slow with a metal spoon. Heat your griddle and pour a little , then top with grounded peanut and sugar with sweet corns if like.,Dot with butter . Leave for 1 mins, fold the pancake and wala you get your yummy apam!!
