Ingredients

Pastry A:
2 cups flour
1/4 tsp salt
1tbsp icing sugar
50gm butter

 pastry B:
20gm butter
1/2 cup flour

fillings:
150gm minced meat
300gm brinjal- cut 2 cm cubes
3 potatoes- cut 2 cm cubes-boil to soften.
100gm button mushrooms-cut quarters
100gm chopped onion
1 tbsp chopped garlic
1 tsp dried parsley
2 tbsp butter
1/2 cup flour
1 cup milk
1 cup water
2 tsp salt
1 tsp black pepper
1 egg yolk

How to make Meat brinjal pie


1. For the pastry, Mix ingredient A and knead into a dough. leave for 1 hour.
2. Mix ingredient B and wrap into A. Roll and repeat folding 3 times. Leave aside while preparing fillings.
3. Heat 3 tbsp olive oil, Saute the onion and garlic till aroma, add meat and stir.
4. Add brinjal , mushrooms and potatoes.Add salt and pepper. Cover and cook till almost dry.
5. In a saucepan , add butter, then add flour and stir to mix. Add milk and water combine, stirring until you get a thicken white sauce.
6. Pour into meat mixture and mix well. season with parsley and pepper .
7. Divide pastry into 1/4 and 3/4 pieces. Used the 3/4 pastry and roll thinly and place in pie dish which is greased. Add fillings and cover with remain pastry. Prick holes with end of knife and brush with beaten egg yolk.
8. Bake in preheated oven (220 C) for 40 mins.
Serve 6 -8
