for pastry base:
2 cups flour
150 gm butter
1/8 tsp salt
1 egg yolk
1/4 cup cold water or less

for sponge base:
2 eggs +1 egg white
2 tbsp sugar
3 tbsp flour
1/2 tsp baking powder
1/2 tsp vanilla
1 tbsp butter-melted

For syrup:
2 tbsp sugar
2 tbsp hot water

70gm butter
1 egg yolk
35 gm sugar
1/2 tsp cornflour or custard powder
1/4 cup fresh milk
1 tsp instant coffee
1/2 tbsp hot water

For whipped cream: whipped till  thicken
1/4 cup whip cream
1/2 tsp sugar

Topping:- combine together
5 tbsp icing sugar
1/3 tsp instant coffee
1/2 tbsp hot water

How to make Mocha custard square

1. For the pastry, Mix the flour,salt and butter , crumb it. Then add egg yolk and water to knead to a soft dough. Chill for an hour. Roll out and fold twice and roll again.
2. Using plastic sheet to help, roll dough flat 2mm , cut into even rectangle.
3.Bake in preheated oven at 170 C for 12 -13 mins. Cool on rack. 
4. To make sponge base:- Whisk eggs and sugar till thicken. Add flour and baking power.
5. Add butter and vanilla., mix well.  Pour in tray lined with greased -proof paper.Bake in oven at 200 C for 15 -20 mins.
6. For the filling:-Add yolks , sugar , milk and cornflour. Stir under low heat till smooth.  Add butter and stir well.
7. Mix hot water and coffee and pour into custard. Stir to combine.
8. Spread whipped cream on pastry, and layer with sponge cake. Brush cake with sugar syrup. and spread custard. Cover with the second pastry. Chill for 30 mins.
9.  Spread top with combined topping . With a warm knife , cut into square and sieve icing sugar over cake by placing a strip of paper so one part of the cake is plain without sugar.
