Ingredients
1 pineapple-grated1 cup sugar
1 stick cinnamon
3 cloves
2 cardamoms
For the dough:
2 cups flour
2/3 cup butter
1/2 tsp salt
1 egg
1 tbsp sugar

How to make Pineapple rolls
1, For the jam, mix altogether in a non-stick pan and cook until thicken and golden brown.Leave to cool.
2 .For the dough, crumb butter in flour and the add the rest of ingredients, knead to soft dough , add a little water if dough is too dry. leave for an hour .
3. Roll out dough into a tennis ball and fill in the jam .
4 Roll up and seal. Arrange on greased tray.
5. Bake in a preheated 200 degree celsius oven for 20 mins.
6. Cut rolls into 1 inch length and serve.

shorty saysWhat country is this dessert from? I have seen other variants of this, but none contained cardamon. This looks like the Chinese pineapple roll recipe with an Indian twist.

marianne49 sayswell normally you dont find pineapple jam with spices, but to add those spices, it brings up the aroma but still taste of pineapple . I am not sure of indian twist , its a famous cookies from Malaysia during the festive season.

shorty saysI am unclear about step 3. Do you roll out one tennis ball or many small tennis balls. Do you shape the entire thing into one long log and slice it?

marianne49 saysYes , roll into 4 or 5 balls flatten and add filling, then roll or fold up and seal. you get the length of a hot dog. brush with egg wash and bake, cut into short pieces to serve. NOTE: the shape can be any shape you want to do.

marianne49 saysno you dont have to keep in the fridge, the jam is cooked until dry and easy to roll with your fingers without sticking and that is matured jam which can last for a month or so. Once the jam is baked with the biscuits it will last without putting them in the fridge.
