Sarawak Mee Belacan -Vermicelli Recipe

Ingredients
1 pkt vermicelli-(mee hoon)-soaked300gm prawns
1 large preserved alkaline soaked squid-sliced
3 tbsp chopped onions
1 tbsp chopped garlic
1 tbsp chopped red chilly
2 tbsp dried prawn floss
2 tbsp belacan granules or prawn paste
1 tbsp anchovies powder or floss
1 tbsp chilly paste
2 tbsp tamarind paste.
6 cups water
3 tbsp fish sauce
1 tbsp brown sugar
salt to taste
Garnish:
3 eggs-make into 3 thin omelets-shredded
1 cucumber-shredded
How to make Sarawak Mee Belacan -Vermicelli
1. Saute the chopped ingredients in 4 tbsp oil till aroma. Add water .
2. Peel the prawns and throw the shells into the water and let boil for 1/2 hour. Add tamarind, fish sauce, sugar and the rest of ingredients except squids. Let it boil for 10 mins. Strain into a clean pot or bowl.
3. Blanch the sliced squids in boiling stock for 1/2 mins .
4 Blanch the prawns in the stock for 1/2 mins too.
5. Blanch the mee hoon in boiling water to soften.
6. In a serving bowl, Add a handful of noodle , Arrange omelet,prawns, squids and cucumber on top pf noodle.Then pour hot stock over it. Serve hot.

marianne49 sayswell this mee belacan is only found in Sarawak country. It very famous here in Kuching. of coz when we cook , we add in the extra , like the omelet which you dont find that in the hawker recipe, hahaha:P
