1 chicken
3 red onions-chopped
3 pips garlic-chopped
1 tbsp Chopped ginger
100gm ginseng
2" ginger root- sliced in strips
1 tbsp oyster sauce
1 tsp light soy sauce
3 cups rice-washed and drain
1 tbsp salt
2  1/2 cups chicken stock
1 tsp sesame oil

How to make Steam chicken rice

1,Saute chopped onion, garlic and ginger in sesame oil to aroma. Add chicken stock and rice. Let boil in rice cooker till cook.
2. Rub whole chicken with oyster sauce and soy sauce, Put in a deep dish , top with ginger and ginseng, Steam for 1 hour. Remove the topping.
3. Chop chicken into serving pieces and pour gravy over chicken. Serve with  chicken rice.

The chicken rice can be serve with additional chilly sauce for dipping chicken pieces, by pounding 1 chilly, 2 pieces ginger, 2 pips garlic till fine, Add lime juice and light soy sauce and 1/2 tsp sugar.

    I've made chicken rice where instead of steaming the chicken, I poach it in a big pot for 1 hour. It comes out nice and juicy, not dry.

    steaming retain the juice in the chicken , usually i used the bones for the stock to cook the rice.
