Ingredients

Baby Carrots or Carrots peeled and sliced into disks

Chicken Stock

Curry Powder

Honey

Hot Sauce

Ricotta Cheese

Parsley/Chives

How to make Carrot Pasta Sauce


I don't have any measurements here and I'm sorry for that.

 

You will want enough chicken stock to cover the carrots in a sauce pan, about equal amounts. Let that simmer for about 10 minutes or until the carrots are soft. Add a pinch of curry powder, a few spoonfuls of honey and a few dashes of hot sauce. Transfer this to a food processor or blender and blend until smooth. Return to the heat and add just enough ricotta to it a little thick and creamy. Add a little pasta water to thicken it up as well. Toss with the pasta and top with parsley, chives and/or parmessan cheese.
