Queso w/ black beans Recipe

Ingredients
- ~8 oz. of grated cheedar (I used extra sharp)
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (10 oz) tomatoes w/ green chiles, drained, not rinsed (I used Rotelle)
- 2 tbsp unsalted butter
- 2 tbsp all purpose flour
- 1 packet Goya Sazon
- 1 tsp ground cumin
How to make Queso w/ black beans
We enjoy this queso often. Sometimes we switch it up by adding half a package of cream cheese, or some ground beef. Serve with tortilla chips.
- drain and rinse black beans
- drain tomatoes w/ green chiles
- melt butter in medium sauce pan, add flour, stirring frequently, cook for about 5 minutes
- slowly add milk and continue frequent stirring until mixture thickens
- add sazon and cumin, cheese, black beans, tomatoes w/ green chiles, mix well
- enjoy
