Italian Sausage and Potato Recipe

Ingredients
- 4 good quality Italian-style Sausages
- 4 large, waxy Potatoes
- 1 large Onion, sliced
- 2 cloves Garlic, finely chopped
- Half-cup Black Olives, pitted and sliced
- Half-cup Sun-dried tomatoes, roughly chopped
- Half-pint Chicken Stock
- 1 rounded tsp Chilli Flakes
- Salt and Pepper
How to make Italian Sausage and Potato
This is so quick and tasty, and utterly perfect for wholesome, warming, comfort food. There is nothing subtle about it!
- Brown the sausages in a frying pan and set them aside when well-coloured
- In the same pan, fry the onions and garlic for 2 minutes
- Add olives, sun-dried tomatoes and chilli flakes. Cook for 1 minute or so
- Add potatoes and ensure they are well-covered with the onion mix
- After 1 minute or so, add stock and browned sausages
- Season to taste
- Cover and simmer gently until potatoes are soft (25 minutes or so). Check periodically and add more stock little by little to ensure the pan does not run dry
- Serve with fresh, crusty, well-buttered bread
