Italian Sausage and Potato

Ingredients

  • 4 good quality Italian-style Sausages
  • 4 large, waxy Potatoes
  • 1 large Onion, sliced
  • 2 cloves Garlic, finely chopped
  • Half-cup Black Olives, pitted and sliced
  • Half-cup Sun-dried tomatoes, roughly chopped
  • Half-pint Chicken Stock
  • 1 rounded tsp Chilli Flakes
  • Salt and Pepper

How to make Italian Sausage and Potato


This is so quick and tasty, and utterly perfect for wholesome, warming, comfort food. There is nothing subtle about it!

  1. Brown the sausages in a frying pan and set them aside when well-coloured
  2. In the same pan, fry the onions and garlic for 2 minutes
  3. Add olives, sun-dried tomatoes and chilli flakes. Cook for 1 minute or so
  4. Add potatoes and ensure they are well-covered with the onion mix
  5. After 1 minute or so, add stock and browned sausages
  6. Season to taste
  7. Cover and simmer gently until potatoes are soft (25 minutes or so). Check periodically and add more stock little by little to ensure the pan does not run dry
  8. Serve with fresh, crusty, well-buttered bread
