Loaded Potato Soup Recipe

Ingredients
- 2 Good Sized Potatoes - Microwave until soft, peel, chop into cubes.
- 1 Small Onion - Chopped
- 2-3 Cloves Garlic - Chopped
- 2 c Chicken Stock/Broth
- 2 c Milk
- 2 tbl Steak Seasoning
- Pinch Dried Rosemary
- ¼ c Flour
- 1 c Colby Jack Cheese (or any cheese)- Shredded
- ½ stick Butter
- ½ package Bacon - cook, cool, chop or use 1 package “real bacon bits”
- 1/2 c Chopped Scallions, Green Onions or Chives - For Garnish
How to make Loaded Potato Soup
In your sauce pan, melt butter. Add onion & garlic, cover and cook on med/low till translucent (do not brown.) Once cooked, turn heat to low, slowly add flour, making sure it is all incorporated. Cook for 1-2 min. Slowly whisk in chicken stock 1/4c at a time, making sure it is all incorporated before adding more. Bring heat up to med/high. Add milk, potatoes, & seasonings, stirring frequently. Once at a boil add cheese, making sure to stir it all in. Reduce head to very low, let simmer until thickened stirring frequently. Garnish with chopped onion.
