Aburage with spring onions (scallions)

Ingredients

  • Half a dozen chunks of aburage (Use my recipe if you can't buy it near you)
  • 2 spring onions (scallions)
  • Dash of mirin
  • Dash of sake
  • Two dashes of soy sauce
  • Water

How to make Aburage with spring onions (scallions)


  1. Mix the mirin, sake, soy sauce and water together. You should have enough to cover the aburage in a small pan

  2. Boil fairly vigorously until almost boiled dry

  3. This step is optional, but placing under a heat source at this point for a few minutes can impart a drier, firmer texture to the aburage.

  4. Slice the spring onions lengthways (julienne) and use to decorate the aburage before serving.
