Fried rice with green beans and feta cheese

Ingredients

  • 125-150g long-grain rice
  • Water
  • Pinch of saffron or turmeric
  • 1 tsp ground cumin

  • Peanut oil (groundnut)

  • 1/2 onion, chopped
  • Handful green beans
  • 1/2 red pepper, diced
  • 50g feta cheese
  • 1 chicken breast, diced (optional)

How to make Fried rice with green beans and feta cheese


Serve with white wine.

Serves 1-2 depending on hunger.

  1. Wash the rice and cook it with an equal amount of water (by volume). Add the cumin and saffron or turmeric to the water.

  2. Saute the onion in the oil.

  3. Steam the green beans

  4. Add the rice to the onion. Add the green beans and the red pepper.

  5. Mix thoroughly and serve topped with diced feta cheese

If you're using the chicken breast, you can fry it, or grill and dice it.
