Sea bass with spring onions (scallions) Recipe

Ingredients
- 1 fillet sea bass
- 2 spring onions (scallions)
- Generous dash of soy sauce
- 1 tbsp mirin
- 2 tsp sake
- Water
How to make Sea bass with spring onions (scallions)
This is more of a side dish than a meal. You could probably make it into a meal for 2 if you serve it with white short-grain rice and miso soup.
Simmer the fish in a blend of sake, mirin, soy sauce and water for 4 minutes on one side and 2 minutes on the other side (or until cooked through)
Cut the fish into portions and transfer to serving bowls. Ladle the cooking sauce over the fish and add a handful of diced spring onions to each one.
