How to make Simple Creamy Pasta Sauce

This is a heavily modified variation of a recipe I found while hunting for a pasta sauce that was neither tomato based nor butter/cream based. I like to change it around and play with it when I get a chance, but here are the basics:

  1. Cut the chicken into bite-sized cubes and begin frying.
  2. While it's frying, cut the mushrooms as coarsly or finely as you'd like (I usually quarter them)  and chop the onions and garlic
  3. When the chicken is cooked to your satisfaction, throw in the mushrooms, onions and garlic.
  4. Stir it all and add the tarragon.
  5. Let it fry for 4 or 5 minutes.
  6. Add the cream of mushroom soup and milk.
  7. Stir until it looks good

Serve over your choice of pasta. I like it with linguine or tortellini.

Here are a few of the variations I've tried:

  • Add 1 tbsp of curry powder to the chicken before adding the vegetables.
  • Add a head of brocolli and/or a diced tomato with the rest of the vegetables.
  • Use shrimp instead of chicken.
