Ingredients
- 2 boneless skinless chicken breasts
- 4 or 5 fresh white mushrooms
- 3 green onions
- 1 clove of garlic
- 1 generous pinch of tarragon
- 1 can of condensed cream of mushroom soup
- an equal amount of milk
How to make Simple Creamy Pasta Sauce
This is a heavily modified variation of a recipe I found while hunting for a pasta sauce that was neither tomato based nor butter/cream based. I like to change it around and play with it when I get a chance, but here are the basics:
- Cut the chicken into bite-sized cubes and begin frying.
- While it's frying, cut the mushrooms as coarsly or finely as you'd like (I usually quarter them) and chop the onions and garlic
- When the chicken is cooked to your satisfaction, throw in the mushrooms, onions and garlic.
- Stir it all and add the tarragon.
- Let it fry for 4 or 5 minutes.
- Add the cream of mushroom soup and milk.
- Stir until it looks good
Serve over your choice of pasta. I like it with linguine or tortellini.
Here are a few of the variations I've tried:
- Add 1 tbsp of curry powder to the chicken before adding the vegetables.
- Add a head of brocolli and/or a diced tomato with the rest of the vegetables.
- Use shrimp instead of chicken.
