Porky Couscous on Romaine beds Recipe

- couscous
- spring onion
- tomato
- garlic
- parsley
- basil
- pork
- mushrooms
- salt
- pepper
- rice vinegar
- soya sauce
- red wine
- olive oil
- romaine hearts
How to make Porky Couscous on Romaine beds
Some of Yongfook's creations prompted me to try a little couscous concoction of my own.
- Finely chop the onion and garlic and set aside.
- Cut up the mushrooms and tomato and set aside.
- Boil enough water for the couscous.
- While you are waiting for the water to boil saute the garlic and onions together in a small pan.
- Once the onions and garlic are on their way and looking almost done add the tomato and mushrooms and get all four elements to a point where they are happy together. When they are done put in a bowl and set aside.
- In the same pan throw the pork in with a little olive oil and stirfry.
- As the pork is cooking turn off the heat on the boiling water and add the couscous and cover.
- When the pork is done throw is the sauted vegetables add a dash of soya sauce and a dash of red wine and reduce over a low heat. When done let cool for 5 min.
- In a large bowl combine the couscous and pork/veg mixture with some chopped basil and parsley.
- Serve the couscous mixture on beds of romaine.
