Ingredients
- 3 cups of cream
- 1/4 pound of butter
- 1 onion chopped-up
- 2 tbsp cornstarch
- Catfish (you can get one from the fish houses all over Mississippi)
- 2 large glasses of water
- Chopped scallions (you got to chop them small)
How to make Catfish Chowder
Cut catfish (use only fillet, don't use anything in front of gills) into chowder-size pieces. Put the fish into a pan with the onion and butter until onions become see-through. Add the water and cream and simmer for like an hour (that's how long it takes to thicken chowder). It should feed three people with large appetites.
