Sandwich - Egg - English muffin - Onion (optional, and raw or cooked) - Some kind of mild melty cheese
Ajvar-based spread - Ajvar - Kale - Garlic - Walnuts
How to make mediterranean-ish egg sandwich
The real attraction in this dish is the ajvar, a Balkan paste made of red bell peppers and some eggplant, garlic, and chili pepper. It's sweet and sometimes spicy, and very flavorful. And I felt like having some in a breakfast sandwich.
Do with the egg and english muffin and cheese and onion (optional) ingredients just what you'd do with a regular egg sandwich.
To make the Ajvar based spread stir fry kale and garlic until the kale is cooked and the garlic is mostly cooked. Blend the kale and garlic and advar and walnuts together till finely chopped. Put on sandwich.
You end up with a sandwich that's sweet and peppery (from the ajvar) and pungeant (from the garlic) but has a roundness (from the walnuts) and a leafy vegetable texture (from the kale). It's especially nice if you have a fried egg sandwich and the egg yolk mixes in with the spread.
